Healthy Mac & Cheese

Whats interesting about this recipe is that it uses no butter. You use greek yogurt instead to achieve a creamy taste! This recipe was adapted from With Peanut Butter On Top, a wonderful health eating blog I came across while searching for healthy recipes on Instagram.


Healthy Mac and Cheese

Ingredients:

  • 2 cups of large shell pasta (* whole grain pasta)
  • 2 cups shredded cheese of choice
  • 1 tomato, diced into cubes.
  • 1/2 cup plain Greek Yogurt
  • 1/2 cup skim milk (or almond milk, unsweetened)
  • 1/4 tsp paprika
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste. 
  • 1 cup baby spinach

Instructions:


  1. Boil pasta for 7-8 minutes or until desired tenderness. Drain and set aside. 
  2. In a separate mixing bowl, add Greek Yogurt, milk, paprika, basil, garlic powder, and onion powder. Whisk together. 
  3. Add 2 cups of shredded cheese.
  4. In a heated pot (use the one you used to boil pasta), add drained pasta and your Greek Yogurt mixture. Mix around to allow the cheese to melt. 
  5. In a separate heated pot, add a little bit of water, bring to a boil and add spinach. Allow the spinach to wilt and then remove. Mix with pasta.
  6. Garnish with (more) cheese. You may Serve with diced tomato on top. 



Whats fantastic about this recipe is that the seasoning gave this healthy recipe a rich taste. I hope to continue making recipes that are healthy and taste good :)
