Nutella Coconut Cake

This weekend, my cousin Lynne came over to spend some quality girl time together. We baked a Nutella Coconut Cake together.  It turned out delicious!



Ingredients

  • 1 cup butter (room temperature)
  • 2 cups white, granulated sugar
  • 4 eggs (room temperature)
  • 1 cup coconut milk
  • 2 teaspoon coconut extract
  • 2¾ cup flour
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tbsp nutella

Coconut Cream Cheese Frosting

  • 1 (8 oz.) package cream cheese, softened (room temperature)
  • ½ cup butter, softened (room temperature)
  • 1 teaspoon coconut extract (we used imitation)
  • 4 cups icing sugar
  • 5 tbsps coconut milk

Step by Step Instructions

1. You'll need two separate bowls - one for mixing and wet and dry ingredients. In a mixing bowl, beat together butter and sugar until well mixed. Use a spatula to scrape down sides and ensure the entire mixture blends well. Add eggs one a time.

2. In a separate bowl, mix together flour, baking powder and salt. 

3. Prepared the coconut milk. Alternate between adding milk and the dry flour mixture into the butter mixture. Add coconut mixture. 





4. Pour into 9 inch cake pan and add a spoon of nutella that you swirl around.



5. Coconut Frosting is made by mixing cream cheese butter. Add the coconut extract and milk. Add icing sugar and consistently. Spread it between the two layers



 6. Once icing is spread to drizzle nutella.
