Ingredients
- 2.5 cups all-purpose flour
- 1 cup brown sugar
- 1.5 tsp baking powder
- 1 tsp baking soda
- 0.5 tsp salt
- 2 eggs
- 1 cup buttermilk (or 1 cup milk mixed with 1 tsp lemon juice, let stand for 5 minutes)
- 1 cup mashed ripe bananas
- 1/3 cup vegetable oil
- 1 tsp vanilla
- 3/4 cup chocolate chips
Steps:
Preheat oven to 357 degrees Fahrenheit. Line muffin tray with paper liners.- Mix together all-purpose flour, brown sugar, baking powder, baking soda and salt. Set aside.
- In a separate bowl mix together eggs, buttermilk vegetable oil, and vanilla.
- Add flour mixture gradually to egg/milk mixture until well mixed.
- Stir in chocolate chips.
- Fill muffin paper liners 3/4 full.
- Bake for 25 minutes or until cake taster comes out clean.
Illustrated Step-by-Step Instructions:
1. Measure out 2.5 cups of all-purpose flour, 1 cup brown sugar.
2. Next add 1.5 tsp baking powder, 1 tsp baking soda, and 1/2 tsp salt.
3. Mix your dry ingredients well with a whisk.
4. In a separate bowl for wet ingredients, add two eggs and 1 cup buttermilk.
5. Mash 1 cup worth of ripe bananas (this turned out to be approximately 2 medium sized bananas) and add to egg/milk mixture.
6. Add 1/3 cup oil, 1 tsp vanilla.
7. Voila! Your wet ingredients, appetizing isn't it? Mix these well together.
8. These are the baking chocolate chips I used (thank you No Frills!) which I clipped with one of those dollar store chip closing clips. Super handy for all of my baking ingredients.
9. Gradually add the flour mixture to the egg/milk mixture in 1/3rds and stir until well combined.
10. Line your baking tray with paper liners.
11. Spoon the batter to fill the muffin liners 3/4 full.
12. Place in oven (which of course has been preheated to 375 degrees Farheinheit.
13. Put your timer on for 25 minutes and bake for that long or until cake tester comes out clean.
