Original recipe from
Canadian Living - I always love their recipes. Everything I've baked from them has come out
perfectly.
Ingredients
- 2.5 cups all-purpose flour
- 1 cup brown sugar
- 1.5 tsp baking powder
- 1 tsp baking soda
- 0.5 tsp salt
- 2 eggs
- 1 cup buttermilk (or 1 cup milk mixed with 1 tsp lemon juice, let stand for 5 minutes)
- 1 cup mashed ripe bananas
- 1/3 cup vegetable oil
- 1 tsp vanilla
- 3/4 cup chocolate chips
Steps:
Preheat oven to 357 degrees Fahrenheit. Line muffin tray with paper liners.
- Mix together all-purpose flour, brown sugar, baking powder, baking soda and salt. Set aside.
- In a separate bowl mix together eggs, buttermilk vegetable oil, and vanilla.
- Add flour mixture gradually to egg/milk mixture until well mixed.
- Stir in chocolate chips.
- Fill muffin paper liners 3/4 full.
- Bake for 25 minutes or until cake taster comes out clean.
